It all initiates on the farm as growers harvest the nuts, meticulously strip away the fibrous outer husk, and conduct a thorough visual examination, culling out any conspicuous defects.
Step 01
SAMPLING
Upon arrival, nuts are weighed and the grower's delivery recorded. Samples are drawn to assess moisture and quality. This data informs payment calculation for the grower's consignment.
Step 02
DRYING
Following sampling, nuts progress through conveyors to an advanced drying facility. Heat, derived from macadamia shell by-product combustion, aids drying. Quality is upheld via computer-controlled steps, finely adjusting temperature and humidity.
Step 03
CRACKING
Post-drying, nuts undergo mechanical cracking. Utilizing sizing graders, aspirator air separators, and electronic color sorters, the shell is separated from the kernel. Process completion directs shell-free macadamia kernels for manual examination.
Step 04
PASTEURISING
Innovative color sorters kickstart sorting, capturing images of good and defective kernels during setup. Operator-defined defect color and size guide the process. As kernels move at 2m/second, computerized scans identify defects, using compressed air to eject faulty nuts. Post-color sorting, manual inspection fine-tunes quality, followed by sizing tower categorization.
Step 05
TESTING
Upon arrival, nuts are weighed, and the delivered weight is logged. Sample analysis evaluates moisture and nut quality, crucial for calculating the grower's consignment payment.
Step 06
PASTEURISING
Our advanced Napasol pasteurization employs steam and modified atmosphere, guaranteeing food safety. This process, independently validated, achieves a 5-log reduction in salmonella, reinforcing our commitment to quality.
Step 07
PACKAGING
Our end products are vacuum-sealed in nitrogen-flushed foil pouches, nestled in cardboard cartons for enduring freshness. Checked for weight and barcode-labeled, these cartons ensure traceability from farm to destination. Stored in our warehouse, the kernel is dispatched worldwide.
